Zaatar Puff Pastry Pinwheels

Golden and flaky zaatar puff pastry pinwheels are quick easy using minimal ingredients.

Ingredients

  • 2 sheets Puff pastry thawed
  • cup Zaatar
  • ¼ cup Olive oil extra virgin

Instructions

  • In a small mixing bowl, combine zaatar and olive oil until it becomes a paste.
    ⅓ cup Zaatar, ¼ cup Olive oil
  • Lay one sheet of puff pastry on a non stick surface and brush zaatar paste onto it, ensuring the edges are covered too. 
    2 sheets Puff pastry
  • Roll the puff pastry sheet into a log and then cut at 2cm (just under an inch) intervals. Place onto a lined baking sheet tray and then use the bottom of a cup to flatten out into thinner discs. Repeat step 2 & 3 with the other sheet.
  • Bake in a preheated fan forced oven 200C (390F) for 14 minutes or until pastry is golden brown. Transfer to a cooler rack. Enjoy warm or cool.

Ensure the puff pastry you use is vegan or plant based.
The non-stick surface to place the puff pastry dough could be a silicone matt* or baking paper.
The longer the puff pastry dough is left out at room temperature, the harder it is to work with. If it becomes too soft, place it back into the freezer until it is manageable.
Ensuring the edges are covered with zaatar helps the puff pastry not open up into a cutlet whilst baking.
Using the bottom of a cup helps to secure the pastry into a round shape. Only press enough to flatten the pastry and not completely squash.
Zaatar puff pastry pinwheels are best enjoyed within the same day, as puff pastry tends to lose its flaky texture. However, you can store this vegan party food in an airtight container in the fridge and then pop them back into a hot oven until they crisp up again.
