Rice Cake With Peanut Butter and Chocolate

A fun and quick treat of rice cake with peanut butter topped with your favorite chocolate. Ready in 15 minutes.

Ingredients

  • 1 Rice cake plain
  • 1-2 tablespoons Peanut butter 100%
  • 1-2 tablespoons Dairy free chocolate melted

Optional

  • 1 small sliced fruit
  • 1 smidge Sea salt

Instructions

  • Melt the chocolate by either bringing water to a boil in a pot and then placing a heat-proof bowl on top, breaking apart dairy-free chocolate and placing it into the bowl. Stir until it has melted. Or place broken chocolate pieces into a microwave-safe bowl and microwave for 30 seconds at a time (stirring occasionally) until all chocolate has melted.
    1-2 tablespoons Dairy free chocolate
  • Spread peanut butter onto the rice cake. Add optional toppings. Then pour chocolate on top. Place in the freezer on a tray until chocolate solidifies. Roughly 10 minutes. 
    1 Rice cake, 1-2 tablespoons Peanut butter, 1 small sliced fruit, 1 smidge Sea salt

Notes

Choc chips work well for melting.
Sliced fruit can be added in between the PB and choc layers
A sprinkle of salt will enhance the sweetness of these rice cakes with chocolate.
Crushed salted roasted peanuts as a topping works well. 
 
This rice cake dessert can store in an air-tight container in the fridge for a couple of days.
