Easy Garlic Vegan Mashed Potatoes

Simple ingredients are used to make this creamy garlic vegan mashed potatoes. Each mouthful is filled with comforting vibes and delicious flavor.

Ingredients

  • 3⅓ Lb Potatoes see best types in above article
  • 3-4 tablespoon Olive Oil optional or substitute dairy free butter.
  • ¾ cup Dairy free milk
  • 1-4 cloves Garlic crushed
  • 1 teaspoon Salt + a pinch for cooking water
  • ½ teaspoon White pepper
  • 10 cups Water for boiling potatoes

Instructions

  • Peel, wash, and chop the potatoes into roughly 1-inch (2.5 cm) sized chunks.
    Bring a large pot of salted cold water to a boil (use a decent pinch of salt), then add the potato chunks. Once the water reboils, reduce the heat to medium and boil the potatoes for about 15 minutes until fork tender.

  • Drain the potatoes in a colander and let sit for 5 minutes to release excess moisture. Return them to the pot or a large bowl and mash until roughly smooth using a potato masher or ricer.
    Mix in crushed garlic, white pepper, and salt to taste.

  • Heat (not boil) dairy-free milk and olive oil (see note #1) in a small saucepan over medium-low heat (microwave is an option). Gradually stir this mixture into the potatoes. Mash to desired consistency; some prefer a slightly chunky texture, while a food processor can achieve a smoother potato mash.

  • Transfer to a serving dish. Garnish with a drizzle of olive oil (optional) and fresh herbs like chives or green onions. Serve warm as a comforting side dish.

Notes

Note #1 The olive oil can be left out if you desire, is show both versions in the video. Or you can replace the oil with dairy free butter.
Ensure there is enough water to cover the potatoes, I have found 10 cups to be suffice to use with chopped potatoes.
Feel free to adjust the amount of plant milk, salt, garlic cloves, oil and white pepper to suit your taste. 
The serving size might result in leftovers.
