Vinegar Cucumber and Onion Salad

Ingredients

  • 2 medium Lebanese cucumbers aka Persian cucumbers (400g)
  • 1 small Red onion (85g)
  • 2 tablespoons White vinegar
  • 2 teaspoons Sugar I used coconut sugar
  • ¾ teaspoon Salt or to taste
  • ¼ teaspoon White pepper or to taste

Instructions

  • Finely dice the cucumbers and onion and place them in a mixing bowl. Add the vinegar, salt , sugar and white pepper. Give the salad a good toss.
    2 medium Lebanese cucumbers, 1 small Red onion, 2 tablespoons White vinegar, 2 teaspoons Sugar, ¾ teaspoon Salt, ¼ teaspoon White pepper
  • Cover the salad, and let it sit for at least 15 minutes in the fridge. Serve cold.
