In a high speed blender, add the drained cooked chickpeas, zest of one lime, lime juice, tahini, garlic, cilantro, cayenne pepper and salt. Blend until smooth and creamy. Scrape down the sides of the blender and then assess if you need to add a spoonful of icy water (see note 1)at a time to adjust the consistency. If so, reblend until incorporated and creamy.
