Creamy Cilantro Lime Hummus

Cilantro lime hummus is quick, creamy and easy to whip up. It's the perfect dip as a snack, appetizer or for parties.

Ingredients

  • cups Chickpeas cooked (this is equal to 1 can)
  • ¼ cup Tahini
  • 1 small Lime zest
  • ¼ cup Lime juice freshly squeezed
  • ¼ cup Iced chickpea water see note 1.
  • ½ teaspoon salt or to taste
  • 1 Clove Garlic
  • 1 handful Cilantro leaves (fresh coriander) add as much as you like
  • ¼ teaspoon Cayenne pepper optional

Instructions

  • In a high speed blender, add the drained cooked chickpeas, zest of one lime, lime juice, tahini, garlic, cilantro, cayenne pepper and salt. Blend until smooth and creamy. Scrape down the sides of the blender and then assess if you need to add a spoonful of icy water (see note 1)at a time to adjust the consistency. If so, reblend until incorporated and creamy.
    1½ cups Chickpeas, ¼ cup Tahini, 1 small Lime zest, ¼ cup Lime juice, ¼ cup Iced chickpea water, ½ teaspoon salt, 1 Clove Garlic, 1 handful Cilantro leaves, ¼ teaspoon Cayenne pepper
  • Transfer the cilantro lime hummus to a serving dish, and drizzle it with (optional) extra virgin olive oil and sprinkle with sumac or paprika or cumin.

Notes

The serving size is just under 2 cups.
Note 1 - Keep a reserve of icy water on hand—up to a quarter cup—to adjust the consistency of the hummus. Add a tablespoon at a time when making adjustments to prevent the dip from becoming too runny.
