Ingredients and Variations
Here are notes on some of the ingredients, the complete list with measurements, can be found in the full recipe card below.
I used my traditional hummus recipe as the base, the simple ingredients include chickpeas (garbanzo beans), tahini, fresh garlic, salt, iced chickpea water or water, and swapped out the lemon juice for lime juice.
Try and use organic lime juice and cans of chickpeas where possible. To change up the beans, try my hummus without chickpeas.
Lime zest is also added to boost the citrus zestiness. You may not think that hummus with lime is all that different to having lemon in it, but it is very different in flavor.
A bunch of cilantro, about a handful, is added. Cilantro in hummus adds a lovely burst of flavor. Feel free to add more if you like.
Cayenne pepper pairs so well with lime, so a little sprinkle is magical.
If you're new to tahini, get ready for a delightful discovery. Tahini is a sesame seed paste, known for its rich, nutty flavor. You can find it in most local supermarkets, or purchase tahini online. Be sure to choose the best quality tahini available for optimal taste.
How To Make Cilantro Lime Hummus
Blend
The first step involves blending in a high-speed blender or food processor, this yields the best results. I personally now prefer the blender over the food processor, it creates a smoother dip.
Combine the canned chickpeas, lime zest, fresh cilantro, tahini, garlic cloves, lime juice, cayenne pepper and salt until the cilantro lime hummus reaches a creamy consistency.
Blend multiple times, scraping down the sides of the blender bowl to ensure smoothness.
If you don't have a blender, make mortar and pestle hummus.
Adjust the consistency
Gradually add a few tablespoons of icy water, a little bit at a time, to get to your desired consistency. Refer to the notes in the recipe card below for guidance.
Adjust the flavor
After blending, taste your homemade hummus and adjust the salt, lime juice, and zest according to your preference.
Chill the hummus in the refrigerator for at least 30 minutes before serving to enhance the flavors.
Serve cold by spooning it into a serving bowl and topping it with extra lime zest and additional cayenne pepper.
Optionally, drizzle with a bit of extra virgin olive oil, or omit if avoiding oil.
