This recipe is incredibly easy and requires only a few simple ingredients.
I love its versatility; you can enjoy it with dips, salads, porridges, soups, or even on its own as a snack.
I always keep some form of chips or crackers in the pantry, like these gluten-free chickpea crackers, because you know how much I love my snacks!

I always make sure to check the label carefully to ensure that the gluten-free pita bread fits my dietary needs. This recipe is a great way to use stale bread.
When it comes to oil, you only need a little bit; either olive or avocado oil works great. I usually use a refillable spray bottle for the oil so I can control how much I use and keep it light.
For seasoning, my go-to is homemade Lebanese zatar, a fragrant mix of herbs and sesame seeds. If you don’t have homemade zaatar, you can buy a quality zaatar blend, or even use sumac, which has a nice sweet, salty, and sour balance. For a twist, you could also try a vegan ranch seasoning or Italian seasoning, whatever you think pairs best for your taste.
Salt is totally optional, especially if your seasoning already contains some. You can sprinkle some at the end, if needed.
The Steps
Cut the gluten-free pita bread into small, bite-sized pieces.
Place the gluten free pita bread pieces in a large mixing bowl.
Lightly drizzle or spray oil over the pita pieces. Then sprinkle your favorite seasoning and a pinch of salt, if desired.
Gently toss everything together to coat the pita evenly, keeping in mind that gluten-free bread can be a bit delicate.
Spread the pita pieces in a single layer on a lined baking sheet.
Bake for about 5 minutes, or until they’re crispy and golden, in a preheated fan-forced oven at 180°C (350°F).
Alternatively, you can air fry them by placing them in the air fryer at a high temperature for 7-8 minutes or until crispy and golden.
Don't overcrowd the air fryer!
Janelle's Tip
If you are using an air fryer, do note that they differ between models and may require different times, so keep an eye on your chips to make sure they don't burn. I use an airfryer with a pan).

Storage
I recommend eating these immediately, but you can store the gluten-free pita chips in an airtight container or snap-lock bag. They can be stored for up to 4 days in the pantry. If they last that long, they usually will retain their crunch. However, this depends on the type of gluten-free pita bread you use.

Gluten Free Pita Chips
Ingredients
- 1 Gluten free pita
- 1 tablespoon Extra virgin olive oil or as much as required
- 1 tablespoon Seasoning I used zaatar
- 1 pinch Salt optional
Instructions
- Using kitchen scissors, cut your gluten-free pita bread into small pieces and place them into a large mixing bowl.1 Gluten free pita
- Drizzle/spray the oil over the pita pieces and sprinkle with your desired seasoning (see notes for suggestions) and optional salt. Gently combine until each pita piece is well coated. You can adjust the amount of oil, seasoning and salt used to suit.1 tablespoon Extra virgin olive oil, 1 tablespoon Seasoning, 1 pinch Salt
- Place the pita pieces onto a lined baking sheet and bake in the oven for 5 minutes, or until they are crispy and golden. Alternatively, you can make these chips in an air fryer by placing them into the air fryer tray and air frying them on high for 7-8 minutes, or until they are crispy and golden.
