A fun and quick treat of peanut butter chocolate rice cakes that's ready in 15 minutes using only 3 ingredients.

Plain rice cakes should have no added flavors.
Natural peanut butter contains only peanuts without any additives. Whether you prefer crunchy or smooth, its versatile consistency makes it perfect for various snacks. I also use it in my homemade chewy vegan no bake granola bars.
If you need to avoid pb, swap it out with any other nut butter eg., almond butter or cashew butter.
Chocolate will be melted and dripped on top of the rice cakes with pb as the top layer coating. I didn’t add any oil during the melting process and I like to use a dairy-free version, you can use whatever chocolate you like.
Variations
Assembling this rice cake dessert can be so much fun, below are some of my favorite additions.
Slices of fruit or berries, such as bananas or strawberries are great to sandwich in between the choc and PB layer.
A smear of jam, compote or caramel sauce made from dates after or with the PB.
Top with crushed salted peanuts, as pictured. I especially love the salt and sweet combination.

Storage
Once the chocolate on the rice cakes solidifies after taking them out of the freezer, place them into an air-tight container in the fridge for a couple of days. The actual rice cake may go a little soft.

Peanut Butter Chocolate Rice Cakes
Ingredients
- 1 Rice cake plain
- 1-2 tablespoons Peanut butter all natural
- 1-2 tablespoons Chocolate dairy free
Optional
- 1 small sliced fruit
- 1 smidge Sea salt flakes
Instructions
- Melt the chocolate using one of two methods:Create a double boiler by boiling water in a pot and placing a heat-proof bowl on top. Break the chocolate into pieces and place them in the bowl. Stir until melted, then remove from heat.Alternatively, place the chocolate pieces in a microwave-safe bowl and microwave in 30-second intervals, stirring occasionally, until melted.1-2 tablespoons Chocolate
- Line a baking sheet with parchment paper. Place the rice cake on it and spread pb over the top. Add any optional toppings you like. Next, drizzle melted chocolate over everything. Optionally sprinkle some flakey sea salt on top. Pop the tray in the freezer until the chocolate hardens, about 10 minutes.
