Peanut Butter Chocolate Rice Cakes

Peanut butter chocolate rice cakes are a fun, no-fuss treat made with just three ingredients. They’re ready in 15 minutes and perfect for a sweet snack or light dessert.


I love how quickly these come together when I need something tasty but easy. The combo of nutty peanut butter and melty chocolate over crispy rice cakes is always a hit. If you like quick snacks like this, check out my vegan no bake granola bars or my cocoa peanut butter balls.

Plain rice cakes

Choose unflavored rice cakes with no added salt or seasonings. They’re the perfect crispy base to hold all the toppings.

Natural peanut butter

Use a peanut butter that contains just peanuts, no added sugar or oils. Smooth or crunchy both work well. If peanut butter isn’t for you, swap in almond or cashew butter instead. You can also mix in a spoonful of jam, date caramel, or compote for extra flavor before adding the chocolate. For something a little extra, top with crushed salted peanuts, I love the sweet and salty combo. I also like this protein peanut butter cups recipe.

Chocolate

Melt your favorite chocolate (I use a dairy-free option) and drizzle over the peanut butter layer. No oil is needed when melting. You can even add fruit slices like banana or strawberries between the peanut butter and chocolate layers to make it feel a bit more indulgent.

Once the chocolate sets (pop them in the freezer for a few minutes), keep these stored in the fridge in an airtight container. Just note the rice cakes may soften a little over time.

Peanut Butter Chocolate Rice Cakes

Ingredients

  • 1 Rice cake plain
  • 1-2 tablespoons Peanut butter all natural
  • 1-2 tablespoons Chocolate dairy free

Optional

  • 1 small sliced fruit
  • 1 smidge Sea salt flakes
Prevent your screen from going dark

Instructions

  • Melt the chocolate using one of two methods:
    Create a double boiler by boiling water in a pot and placing a heat-proof bowl on top. Break the chocolate into pieces and place them in the bowl. Stir until melted, then remove from heat.
    Alternatively, place the chocolate pieces in a microwave-safe bowl and microwave in 30-second intervals, stirring occasionally, until melted.
  • Line a baking sheet with parchment paper. Place the rice cake on it and spread pb over the top. Add any optional toppings you like.
    Next, drizzle melted chocolate over everything. Optionally sprinkle some flakey sea salt on top. Pop the tray in the freezer until the chocolate hardens, about 10 minutes. Enjoy right away for the best taste.

When complete the rice cakes do not have to look perfect, I love that I can let them look rustic.

    Who would’ve thought to put chocolate like this onto a rice cake with peanut butter. I do sometimes swap the pb with almond butter. Satisfies my cravings

      I never thought about making chocolate rice cakes. I sometimes think my brain can conjure up stuff like this, I need to be more creative - I did enjoy these, my creativity will extend out to I put chocolate sprinkles on top also for fun
