Chocolate bliss balls without dates are rich, fudgy, naturally sweetened, and ready in minutes. These bite-sized treats are perfect for busy snackers, lunchboxes, or a quick chocolate craving fix.

These bliss balls without dates are what I turn to when I want something fast, chocolatey, and energizing. They come together in 10 minutes, and the texture is so good, slightly fudgy, perfectly sweet, and rich in cacao. Let me know how you go, or tag me if you make them!

If you’re a fan of quick sweet snacks, you might love my cocoa powder peanut butter balls, sour lemon coconut balls, matcha balls, or even vegan chocolate avocado balls.

Trust me, you're going to enjoy these chocolate bliss balls! I know I do!

Ingredients

Notes on some of the ingredients, the full list of ingredients and their measurements can be found in the recipe card below.

almond meal, oats, cacao powder, cocoa nibs, desiccated coconut, vanilla extract and maple syrup in bowls

Here’s what you’ll need to make these chocolate protein balls without dates:

Almond meal: This forms the base. I use raw almond meal with the skin on for a hearty texture. You can swap this for oat flour or sunflower seed meal for a nut-free version.

Desiccated coconut: Adds natural sweetness and a bit of chew. You can use shredded coconut if that’s what you have.

Rolled oats or quick oats: Helps bulk out the mixture. Quick oats work better if you’re mixing by hand.

Raw cacao powder: Deep chocolate flavor with zero sugar. Cocoa powder without anything added also works.

Maple syrup: Just enough to sweeten and bind. Make sure it’s pure maple syrup.

Cacao nibs (optional): These add crunch and even more chocolate intensity. I was skeptical at first adding these in, and was surprised with how nice the bliss balls turned out with them.

Pro Tips

Blender or by hand: If using a food processor, scrape down the sides a few times. If mixing by hand, use quick oats and break up any clumps in the almond meal.

Sticky enough? The dough should hold together when pressed. If too dry, add a touch more maple syrup.

Roll + coat: I like to roll mine in extra coconut or cocoa powder for a fun finish.

Make ahead: These keep in the fridge for up to 10 days, or freeze in a container for up to 2 months.

Add-ins: You can throw in a spoon of nut butter, a few chopped nuts, or a dash of vanilla for variations.

Hey Janelle, do you think I can use my own almond meal for this recipe? I make homemade almond milk, and I've been trying to find a way to use the strained almond bits for something.

Im confused by the 1/4 and 1/8 maple syrup twice in the ingredients list. Does this mean 1/4-1/8 maple syrup depending on what you need. Or does it mean add 1/4 and 1/8 which would be like 1 cup and a bit?

You will need both measurements in there, both 1/4 and 1/8. Sorry about this, I will make it easier to understand

Jumped onto these as soon as you sent them in email Janelle. These are the best chocolate bliss balls ever! I normally buy some from the shops, but find them either too dry or too oily. You're a life saver. I also want to say that I like the crunchiness from the cocoa nibs.
