Ingredients You'll Need

Fresh lemons will be zested and squeezed to obtain fresh lemon juice. Avoid store-bought lemon juice which may contain additional ingredients such as preservatives.
Pitted dates, I used regular dates, you can also use Medjool dates. They are best used at room temperature when they are soft. Dates are packed with energy and carbohydrates that can help give you energy.
Shredded coconut or desiccated coconut will be placed in the mixture and optionally used to coat these coconut lemon balls.
Rolled oats are a great filler, packed with good dietary fibre and keep you feeling full for longer, making them ideal in this nutritious snack. If you are on a gluten free diet, be sure to buy gluten free certified oats.
Vanilla extract adds more flavoring.
Maple Syrup will help with sweetness but also add moisture to the dry ingredients to create a creamy texture.
How to Make Easy Coconut Lemon Balls
Create The Sticky Dough
In a food processor (affiliate link), add the pitted dates, lemon juice and lemon zest, shredded coconut, rolled oats, maple syrup and vanilla extract.
Process them for one minute and then use a spatula to scrape down the sides of the food processor. Process for another minute.
Shape The Balls
Using your hands, take some of the mixture using either a spoon or cookie scoop and roll it into 1-inch balls.
Optional extra coconut flavor, cover the balls in shredded coconut by rolling them around in more shredded coconut and then place it onto a parchment paper lined tray.
Repeat until all the mixture is used.
Make sure the balls are not touching. Place the tray for one hour into the fridge so the lemon balls harden.
Then transfer them to an airtight container and place them into the fridge for up to one week.
Pro Tips
Avoid using cold dates where possible, as they are very hard and may not blend as well. If you only have cold dates, soak them in hot water for a couple of minutes to help them soften and then drain them well.

Ingredients
- ½ cup Pitted dates room temperature
- 1 teaspoon Lemon zest heaping
- ⅓ cup Lemon juice fresh
- 1 cup Shredded coconut optional - plus extra for coating
- ½ cup Rolled oats
- 1 teaspoon Vanilla extract
- 1 tablespoon maple syrup
Instructions
