Peanut Butter Chocolate Rice Cakes

A fun and quick treat of peanut butter chocolate rice cakes that's ready in 15 minutes using only 3 ingredients.

Equipment

Ingredients

  • 1 Rice cake plain
  • 1-2 tablespoons Peanut butter all natural
  • 1-2 tablespoons Chocolate dairy free

Optional

  • 1 small sliced fruit
  • 1 smidge Sea salt flakes

Instructions

  • Melt the chocolate using one of two methods:
    Create a double boiler by boiling water in a pot and placing a heat-proof bowl on top. Break the chocolate into pieces and place them in the bowl. Stir until melted, then remove from heat.
    Alternatively, place the chocolate pieces in a microwave-safe bowl and microwave in 30-second intervals, stirring occasionally, until melted.
    1-2 tablespoons Chocolate
  • Line a baking sheet with parchment paper. Place the rice cake on it and spread pb over the top. Add any optional toppings you like.
    Next, drizzle melted chocolate over everything. Optionally sprinkle some flakey sea salt on top. Pop the tray in the freezer until the chocolate hardens, about 10 minutes. Enjoy right away for the best taste.

Notes

When complete the rice cakes do not have to look perfect, I love that I can let them look rustic.
