Kupus Salata (Croatian White Cabbage Salad)

A Croatian recipe of crunchy shredded white cabbage salad called Kupus Salata, that has been is tossed through a simple caraway seed vinegar dressing. An ideal side to any savory meal.

  • ¼ small-medium Cabbage cannonball
  • 1 tablespoon White vinegar
  • 1 tablespoon Olive oil
  • 1 teaspoon Caraway seeds
  • ¼ teaspoon Cracked black pepper
  • ½ teaspoon Salt or to taste

Instructions

  • In a large bowl massage (macerate) the shredded cabbage, until it has softened.
    ¼ small-medium Cabbage
  • Toss through the caraway seeds and dressing. Serve cold.
    1 tablespoon White vinegar, 1 tablespoon Olive oil, 1 teaspoon Caraway seeds, ¼ teaspoon Cracked black pepper, ½ teaspoon Salt

Makes about 4 small servings, depending on the size of the cabbage
Cabbage can be finely sliced or shredded, if you'd like use the shredded version, only slightly massage until it feel just soft.
For a low fat version, leave out the oil.
Make it ahead of time. It will store in the fridge for up to 3-4 days. The longer it sits, the softer and juicer it will be.
Suggestion - serve it with fasolia, a Lebanese kidney bean stew or even a vegetable and nut rice.
