Coconut Lemon Balls

Coconut lemon balls are perfect if you’re a lemon lover looking for an easy, no-bake treat! Made with fresh lemons and shredded coconut, these bites are naturally flavorful and come together in just 10 minutes.

Ingredients

  • ½ cup Pitted dates room temperature
  • 1 teaspoon Lemon zest heaping
  • cup Lemon juice fresh
  • 1 cup Shredded coconut optional - plus extra for coating
  • ½ cup Rolled oats optional - GF certification
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Maple syrup

Instructions

  • In a food processor, add the pitted dates, lemon juice and lemon zest, shredded coconut, rolled oats, maple syrup and vanilla extract.
    Process them for one minute and then use a spatula to scrape down the sides of the food processor. Process for another minute.`
    ½ cup Pitted dates, 1 teaspoon Lemon zest, ⅓ cup Lemon juice, 1 cup Shredded coconut, ½ cup Rolled oats, 1 teaspoon Vanilla extract, 1 tablespoon Maple syrup
  • Using your hands, take some of the mixture using either a spoon or cookie scoop and roll it into a 1 inch balls.
    Optional step, cover the balls in shredded coconut by rolling them around in more shredded coconut.
    Place the ball onto a parchment paper lined tray. Repeat until all the mixture is used. Make sure the balls are not touching.
    Place the tray for one hour into the fridge so the lemon balls harden. Then transfer them to an airtight container and place them into the fridge for up to one week.
