In a mixing bowl or food processor combine almond meal, matcha powder, maple syrup and peanut butter. See above tips about using food processor.
1 tablespoon Matcha powder, 1½ cups Almond meal, 4 tablespoons Maple syrup, ½ cup Peanut butter
Using your hands, roll the mixture into balls just over an inch (3 cm) in diameter. Roll each ball in crushed pistachios until fully coated. Place the coated balls on a tray, cover, and refrigerate until firm. Store in an airtight container in the fridge.
