I bet you didn't know that the people who invented fattoush (Lebanese people) love it with raw purslane in it. Fattoush salad is a vibrant combination of vegetables, herbs, and crispy pita bread, and the addition of purslane brings a unique, lemony flavor that is fabulous in the pomegranate molasses dressing. If you look closely at the picture, you will see purslane leaves scattered throughout.

Now whilst the recipe is for spinach, I often have made these hand pies with purslane. These pies are addictively good, the pastries is made from scratch. These are popular in Lebanon.
