Roasted salted peanuts made at home hit the tastebuds so much better than store bought. With only two simple ingredients and under 30 minutes, you’ll have a crunchy, lightly salted snack - a pantry staple.
My favourite part of making big batches of these oven roasted peanuts is the crackling sound they make as they cool down fresh out of the oven. They store really well and I can't help but grab small handful throughout the day to keep me going.
My method gives just the right amount of salt and that perfect crunch I’m always chasing. When I served these to my mother the other day, she immediately asked how I made them as the salt was so evenly spread through every peanut. I honestly thought I’d come up with a unique technique, but she smiled and said, “you make them just like your aunty”. Good cooks really do think alike!
Another snack containing different nuts that I know you'll enjoy are these clusters of seeds and nuts. Otherwise give these chewy granola bars or air fryer spiced nuts a try.

Ingredients
When I buy raw peanuts, I look for the large ones. The packet usually says “large raw peanuts”. If you can’t find them, any shelled raw peanuts will do. I keep the skin on.
Any edible salt works here, since it'll be dissolved in boiling water for the brine.

Janelle’s Tips and Storage
- Place the tray in the middle of the oven, it’s usually the hottest spot. Roasting time varies slightly between ovens, but 13 to 15 minutes is the sweet spot.
- When they come out of the oven, the peanuts will still be soft. Once they cool to room temperature, they turn crunchy.
- Store your roasted salted peanuts in an airtight container in the pantry. They can last a couple of weeks, though in my home they never make it that long.

Roasted Salted Peanuts
Ingredients
- 3 tablespoons Salt
- 1 cup Raw peanuts shelled
Instructions
- In a bowl, dissolve the salt in boiling water with a vigorous stir. Add the raw peanuts and let them soak for 10 minutes.
- Strain the peanuts through a sieve and let them sit for 2 minutes to drain completely. Spread them out in a single layer on a roasting pan.
- Roast in a preheated oven at 200C (390F) for 13 to 15 minutes, or until golden brown. Allow them to cool completely to room temperature so they firm up before enjoying.
